Ingredients:

- 3-4 pound beef chuck roast

- 1 tablespoon oil

- 1 onion, chopped

- 4 cloves garlic, minced

- 2 cups beef broth

- 1/2 cup red wine

- 2 tablespoons tomato paste

- 2 bay leaves

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper, to taste

- 4 carrots, peeled and chopped

- 4 potatoes, peeled and chopped

- 2 celery stalks, chopped

Instructions:

1. Heat the oil in a large skillet over medium-high heat. Sear the beef on all sides until browned.

2. Transfer the beef to a slow cooker.

3. Add the onion and garlic to the skillet and cook until softened.

4. Add the beef broth, red wine, tomato paste, bay leaves, thyme, rosemary, salt, and pepper to the skillet. Stir to combine.

5. Pour the mixture over the beef in the slow cooker.
