Cabbage soup

  Here's a recipe for cabbage soup:

Ingredients:

- 1 head of cabbage, chopped

- 1 onion, chopped

- 2 carrots, chopped

- 2 celery stalks, chopped

- 4 garlic cloves, minced

- 6 cups chicken or vegetable broth

- 1 can diced tomatoes

- 1 teaspoon dried thyme

- 1 teaspoon dried oregano

- Salt and pepper, to taste

- Optional: cooked sausage or bacon for added flavor

Instructions:

1. In a large pot or Dutch oven, sauté the onion, carrots, celery, and garlic until the vegetables are tender.

2. Add the chopped cabbage to the pot and stir to combine.

3. Pour in the chicken or vegetable broth and add the diced tomatoes, thyme, oregano, salt, and pepper.

4. Bring the soup to a boil, then reduce the heat and simmer for 20-30 minutes, or until the cabbage is tender.

5. If using cooked sausage or bacon, add it to the soup and let it simmer for an additional 5-10 minutes to heat through.
