Ingredients:

- 1 cup unsalted butter, softened

- 1/2 cup confectioners' sugar

- 2 cups all-purpose flour

- 1/2 cup cornstarch

- 1 teaspoon vanilla extract

- 1/2 cup raspberry jam

- Confectioners' sugar, for dusting

Instructions:

1. Preheat your oven to 350°F (180°C). Line two baking sheets with parchment paper.

2. In a large bowl, cream together the butter and confectioners' sugar until light and fluffy.

3. In a separate bowl, whisk together the flour and cornstarch.

4. Gradually add the flour mixture to the butter mixture, mixing until well combined.

5. Stir in the vanilla extract.

6. Spoon the dough into a piping bag fitted with a large star tip.

7. Pipe 24 swirls onto the prepared baking sheets.

8. Bake for 12-15 minutes, or until the edges are lightly golden.

9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

10. Once the cookies are cool, spread a dollop of raspberry jam on the flat side of half of the cookies.

11. Top with the remaining cookies to make sandwiches.

12. Dust with confectioners' sugar before serving.
