Hoppin' John

 Here's a recipe for Hoppin' John:

Ingredients:

- 1 pound black-eyed peas, soaked overnight

- 1 onion, chopped

- 1 green bell pepper, chopped

- 2 celery stalks, chopped

- 2 garlic cloves, minced

- 1 ham hock or 1/2 pound bacon, chopped

- 1 teaspoon dried thyme

- 1 teaspoon dried oregano

- 1 bay leaf

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 4 cups chicken broth

- 2 cups long-grain rice

- 3 green onions, chopped


Instructions:

1. Drain and rinse the soaked black-eyed peas.


2. In a large pot, sauté the onion, green bell pepper, celery, and garlic until tender.


3. Add the ham hock or bacon, thyme, oregano, bay leaf, salt, and black pepper. Cook until the meat is browned.


4. Add the black-eyed peas and chicken broth. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the peas are tender.


5. Remove the ham hock or bacon and bay leaf from the pot.


6. Stir in the rice and green onions. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.


7. Fluff the rice with a fork and serve hot.
